This is one of my favorite side dishes at Thanksgiving! I will have to admit, I received this long time recipe from my Ammaw. Every single time this casserole appears, I have to get a second helping because it only appears once a year. Now that I’m an adult, I make this delicious sweet potato casserole for extended family.
Sweet potato Ingredients:
- 3 cups of mashed sweet potatoes
- 1/2 cup sugar
- 1 can (12 oz.) evaporated milk (Ammaw uses PET brand)
- 1 1/2 sticks of butter
- 2 eggs beaten
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon vanilla
- Preheat Oven to 425 degrees
- Mix together and bake in a 9 X 13 inch baking pan and bake for 15 minutes
Sweet potato topping ingredients:
- 1/2 cup Frosted Flakes -crushed up
- 1/2 cup pecans (chopped)
- 1/2 cup brown sugar
- 1/2 stick butter
- Mix together and pour over sweet potatoes.
- Bake at 405 degrees for 15 minutes
